The cut and how it is aged

Both dishes use Hanwoo 1++ beef rib (so galbi). SEOLYA GALBI does not cut every piece to one standard; thickness and angle are set by grain direction, texture and cooking speed. The rib is closely scored so the marinade penetrates evenly and the meat cooks evenly over charcoal.

The marinade is the house recipe, kept deliberately light on sugar so it does not mask the beef. Fresh galbi is aged to build aroma and served with no marinade at all — the same rib becomes two different dishes.

How it is grilled — you do not cook

A dedicated server grills everything over the charcoal brazier at your table. Marinated galbi burns easily because of the sugar, so heat control makes the dish; fresh galbi needs a fast sear to hold its juices. If you order both, the usual order is fresh first, marinated second — once marinade hits the grill it masks the cleaner taste of the unmarinated rib.

Beef is ordered by the cut in 100g portions, so a table can order only marinated or only fresh galbi. For dinner, ₩90,000–150,000 per person including food and drinks is a comfortable budget.
